We are doing pretty well with SCD. I made a mistake and didn't check our vanilla for sugar and made waffles the other day. We both had a bad reaction and thought for sure that it was the almond flour until last night when Alex discovered the sugar in the vanilla. Really. Who would have thought that there was sugar in vanilla? (Maybe I should have...) I assumed that because it said it was "pure vanilla extract" it would be ok. Guess I was wrong.So much of our diet before was based on carbs that it is going to take a bit for our tastes to change. I think I am going to just serve hunk of meat, side of veg and fruit until we has been away from this stuff long enough that we don't crave it.
After much searching and experimentation, we have decided to use the Midas Gold Pancake/Waffle recipe from BTVC as a sandwich bread. The inspiration for this came from a SCD website that had a "fun for kids" sandwich pancake that had cheese in it. Only one boy liked it. They all love the Midas Gold recipe, so what the heck, right?
As always, all meals are served with a salad, fruit and vegetable (for those who can tolerate.)
